This deliciously simple sauce is so comforting! Caramelized onions blended with parmesan, cream, and pasta water create a silky smooth sauce that clings perfectly to a sturdy pasta (rigatoni, penne, bucatini). The richness of the caramelized onions are balanced by the salty parmesan cheese. With only a few simple ingredients you can create an elevated and gourmet dish perfect for a winter date night!





Creamy Caramelized Onion Pasta

Ingredients


  • 2 servings of pasta of your choice (tube-shaped pastas hold the thick sauce best)

  • 2 sweet onions (thinly sliced root to tip)

  • 1 tbsp olive oil

  • 2 tsp italian seasoning

  • 2 tbsp balsamic vinegar

  • 4 tbsp salted butter

  • 1/3 cup reserved pasta water

  • 1/3 cup freshly grated Parmigiano Reggiano

  • 1/4 cup heavy cream


Directions


  1. Caramelize onions by adding sliced onions to a skillet with olive oil, italian seasoning, and a pinch of salt and simmer over low medium heat until they begin to brown, stirring occasionally.

  2. Deglaze with balsamic vinegar and cook until fully caramelized.

  3. Stir in 2 tbsp butter to onions and remove from heat.

  4. Cook pasta in salted boiling water until al dente.

  5. Add caramelized onions, reserved pasta water, half of the grated parmesan to blender and blend until smooth.

  6. Pour sauce back into skillet and combine with cooked pasta, heavy cream, 2 tbsp butter, and remaining parmesan over low medium heat.

  7. Serve with fresh cracked pepper and more grated parmesan and enjoy!
